Chocolate Cheesecake Truffles
These are so easy, it's criminal! I got the recipe from a soap forum I frequent, and have converted it to metric/UK pack sizes to make it easier for me. :)
Makes about 25 truffles:
165g sleeve of Oreo cookies
100g full fat cream cheese, softened to room temperature
150g cooking chocolate, broken into pieces
1T butter
Put the Oreos in a food processor and whirl until they're powdered and then mix them with the cream cheese. Put the mixture in the fridge for about two hours to chill. Once cold, remove the mixture and roll it into small balls and place them on greaseproof paper. Once you've made the balls, chill them again for about 20 minutes. Melt the cooking chocolate and add the butter to it to help keep it smooth. Then roll the Oreo/cream cheese balls in the melted chocolate and place on clean greaseproof paper to cool.
I made them last night and they are delicious. A drop or two of raspberry jam added to the Oreo/cream cheese mixture would make a lovely variation.

I made some truffles a couple of weeks ago and they didn't last long. Wait until I show my sis & niece the recipe for these - bang go the diets!

I don't mind if my kids did that, I'm worried about my own lack of will power! LOL! I'm officially middle-aged in about half a year and gosh darnit, the pouds don't magically work themselves off anymore. ;)
Officially? I've been considering myself middle aged for well over a year now. Is there an industry standard? :)
